Surgery and Brisket

Well with all the hard work it did not take long to knock one of us down for the count. The day after we were married we decided it would be a good idea to put up hay all day for the horses. So there we were out in the field, Christy on top of the trailer moving the square bales that I was throwing up from down on the ground. After getting back to the house it was time to put the hay up in the barn, well survey says I am not as young as I use to be because I ended up suffering a hernia. So needless to say, I recently had surgery to repair the hernia and I wont be throwing any hay bales for about a month. Now to make it all feel better, we decided to smoke up a brisket. Well it was a good choice, we smoke a whole brisket and it turned out to be the most tender brisket I have ever ate. The next day I took some to work and could cut it with a plastic fork. Look at the cooking tips page to see how we cooked it. A big thanks out to our processor who gave us a quick lesson on smoking brisket after our first endeavor was not so appealing.

Recent Updates

Well we have not posted anything to the blog lately but boy have we been busy. We had new cattle delivered in from Oklahoma, thanks Blake for the new cattle. On top of that we have slaughtered one more that weighed about 1100 pounds on the hoof with a dressed carcass weight of 620 pounds. Thanks to all that have placed your orders and for those that are requesting to be placed on the reserve list. Those that just ordered will all be picking their fresh meat up tomorrow but if you did not get on this one the next one will be initially processed the last weekend of October. One quarter is already reserved so dont wait to long.
 
Lets see, what else have we been up to? Oh yeah, the most important event that could have taken place, Christy and Chris were married on October 1st at Ha Ha Tonka State Park at the old castle ruins. No fret for invites, it was small. Just the two of us, the officiant, one witness, and the photographer, and it was perfectly stress free. Thanks Cindy, Gerry, and Bobbie for making our day special. And then that night we attended a Military Ball. A perfect evening for a perfect day.
 
Today we finished the new small pasture for our miniature Scottish Highlands, Chewie and Mia. They are true mini's and you would be amazed at how perfectly they are matched for each other. Well, thats all for now, look forward to hearing from you all. Have a great week.

The Perfect Chuck Roast

Christy cooked the perfect chuck roast tonight. By the time it was done it was falling off the bone and flaked under the weight of our forks. By far the best roast I have personally ever ate. It was perfectly juicy, moist, and oh so tender. And to top it off, the broth did not even get that white film on top like so many other types of beef. I would like to say that at this time of the year and the nearing 10th Anniversary of the deadly attacks on our country, take time this weekend and reflect on how the world was changed 10 years ago on September 11th.
